Carb-Free Chilli PoppersBaked not Fried Cheesy Jalapeño Poppers
Who said Carb-Free could ruin all the fun? These Carb-Free Chili Poppers are definitely not boring and will spice up anyones life. And the best part — you don’t have to feel guilty about it!
Plus, it’s super easy and quick to whip up. All you need is pickled Jalopeño peppers, cream cheese, cheddar and some cured ham like Parma, but any ham or even streaky bacon would work a treat too. My recipe makes about 4-5 (depending on how big your chillies are and how much you stuff ’em with cheese, but you can easily double or triple the recipe — they’re so good I’d suggest tripling.
They’re great for parties, or as snacks and make a great treat when you’re off the carbs! Also, since they’re baked, not fried not only are they healthier; but a lot less tiresome to make — deep-frying (albeit delicious) is time-consuming, and you cannot walk away from the pot! These you pop in the oven for 15-20mins and while you wait you can chat to your guests or watch a bit of telly.

Carb-Free Jalapeño Poppers
prep: 5 mins
cooking time: 15-20 mins
4 Pickled Jalapeño peppers
1/2 cup cream cheese
1/2 cup grated cheddar
4-8 slices of cured ham (depending on how pig your ham slices are)
Slice peppers open. Remove seeds. Mix cream cheese and cheddar together. Fill peppers with cheese mix. Wrap ham slices around peppers — making sure to enclose the slit on the pepper, you don’t want all the cheese to ooze out.
place into an oven dish. Bake at 180 degrees Celsius for 15-20 mins or until the ham is slightly crisp.
enjoy straight away.
