Sweet Potato Toast is the answer to your prayers! Well, that is if you follow a banting, low-carb or gluten-free diet. And even if you don’t, you’ll fall in love with the idea. Not only is it easy and quick, but super delicious and guilt-free!
In my video I toast the sweet potato slices 3 times on the highest setting. Depending on your toaster the amount of times you’ll need to toast your sweet potato slices will vary. A few other sites/blogs, recommend toasting only twice. My toaster is not very fancy so I presume this is why it took me 3 goes. Also, I suggest lightly brushing with olive oil — and I mean LIGHTLY! Your toaster will not be happy if you douse your potatoes in dripping oil! On this note, the olive oil is optional. I just prefer the flavour, I tried without and found that it didn’t get as quite a nice caramelised char as it did with the addition of olive oil.
